Introduction

These are great breakfast cakes and are healthy. These are great breakfast cakes and are healthy.

Ingredients

    1 c. white flour
    1 c. whole wheat flour
    1/2 c. cornmeal
    1/2 teaspoon baking soda
    2 1/2 teaspoons baking powder
    1/2 teaspoon salt
    2 cups lowfat buttermilk
    1/4 cup canola oil
    2/3 cup egg substitute
    1 whole egg

Directions

Mix together dry ingredients. Beat together buttermilk, oil and eggs, Add liquid mixture to dry ingredients, stirring enough to blend (lumps are okay). Heat griddle, skillet until water "dances" on it. Add batter and brown on both sides, turning after the bubbles in the batter pop on the first side. The leftover batter refrigerates and can last up to a week.
