    1 tbsp Olive Oil
    8 oz Ground beef, lean
    0.75 tsp Oregano, ground
    1 cup, chopped Onions, raw
    0.5 tsp Salt
    0.5 tsp Pepper, black
    1 can (29 oz) (401 x 411) Pureed Tomatoes
    4 oz Mozzarella Cheese, part skim milk
    0.5 package (10 oz) Spinach
    8 oz Whole Wheat Penne (dry)

    1.4 cup (8 fl oz) Chicken Broth


Heat oil in pan. Add chopped onion; cook for one minute. Add ground beef and oregano. Cook about 3 minutes, crumbling beef. Add salt, pepper, crushed tomatoes, chicken broth and penne. Bring to a boil and then reduce heat; cover and cook 14-17 minutes until penne is cooked. Add spinach. Stir in. Sprinkle shredded cheese over top. Cover and heat until cheese melts. Serve. Serving Size: 4 servings
