Introduction

A simple easy meal. Very quick if you have the rice made ahead of time. A simple easy meal. Very quick if you have the rice made ahead of time.
Number of Servings: 4

Ingredients

    1 1/4 cups Lundberg Black Japonica Black & Mahogany Rice, dry uncooked
    2 1/2 cups Water

    1 can S&W White Beans (1.75 cups)
    1 can Safeway Whole Kernal Corn, no salt added (1.75 cups)
    1 can Safeway Diced Peeled Tomatoes, no salt added (1.75 cups)
    6 tbsp Lucerne Light Sour Cream

Directions

1. In a large pot combine rice and water, bring to a boil. Stir once, cover with lid and reduce to simmer for 50 minutes.

2. Open White Beans, Corn and Tomatoes, drain well. Rinse white beans throughly.

3. When rice is finished add beans, corn and tomatoes. Divide into 4 servings, about 2 cups each.

4. Top with 1 1/2 tbsp Sour Cream each. If freezing, leave out sour cream and top when serving.

Add 1 cup of Milk to make a full meal.
