Introduction

Ingredients

    3 cup, chopped or diced Turkey (light meat)
    9 cup Turkey Broth Stock 1c=10cals Homemade (see my recipe) low fat, low salt pre-seasoned (by MOV4WARD)
    1.5 cup, chopped Onions, raw
    1.5 cup, chopped Carrots, raw
    1.5 cup, diced Celery, raw
    1 cup Brown Rice, long grain

Directions

Boil or pressure cook turkey carcass, remove from stock, reserve meat and stock, discard bones. Add meat from bones and enough leftover turkey to make 3 cups. Add diced vegetables and brown rice. Bring to boil and simmer until rice is cooked, at least one hour. Season to taste. I used Bell's turkey seasoning, pepper and a small amount of salt.

Serving Size: makes 8 1.5 cup servings
