Ingredients

    2 eggplant, peeled (yield from 1 Eggplant, fresh
    1 serving 1 Med. Green Bell Pepper
    74 gram(s) bell pepper, red, sweet, raw
    1.5 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    6 tsp Lemon Juice 'Real Lemon' 100% juice
    9 tsp Canada Garlic Inc. Chopped Garlic (by JENNYHODGSON1)
    2 tsp Cumin seed
    1 tsp Ground Cayenne Pepper (Powder) (by HALLVA)
    4 tbsp Tahini
    1 tbsp Pepper, black

Tips

Can also be served with raw veggies and pita as a dip for parties.
cooking time depends on size of eggplant you want it to be soft when you take it form the oven. If they are big add hte peppers and onions at about halfway so they don't get over cooked.


Directions

roast peppers, eggplant and 1 whole red onion or more to taste coat with olive oil for roasting at around 400 degrees for about 30-45 mins or till eggplant cooked. Let eggplant cool and then peel eggplant. Put all the ingredients together puree and then I add some raw red onion for a little kick.
