Ingredients

⅔ cup unsweetened apple juice
2 oz unsalted butter
1 oz shortening
⅓ cup half and half or non-dairy coffee cream
1 ½ cups sugar
3 oz (½ cup) cinnamon chips
3 oz chopped white chocolate
½ cup diced dried apple
1 tsp vanilla
¼ tsp nutmeg
1 tbsp gluten free graham cracker crumbs, to top
Directions
Line a loaf pan with parchment paper.
Boil apple juice until reduced by half.
Add butter, shortening, cream and sugar in a medium, deep saucepan.
Bring to a rolling boil over medium-high heat and boil until the temperature reaches 236F, stirring constantly to avoid burning.
Turn the heat to low, stop stirring, and cook until temperature reads 240F.
Remove from heat. Add cinnamon chips, white chocolate, vanilla and nutmeg.
Stir until cinnamon chips and white chocolate are completely melted and cool to 110F.
Beat in diced apple.
Pour into prepared baking dish and sprinkle with graham cracker crumbs.
Cover and refrigerate for at least three hours or overnight. To serve, cut into squares.
