Ingredients

    1.0 cup Red Lentils
    2.0 cup, cubes Sweet potato
    6.0 cup Vegetable Broth
    0.5 cup, halves Apricots, dried
    12.0 oz Thai Kitchen Light Coconut Milk
    3.0 tsp Sriracha Hot Sauce (Rooster sauce)
    0.25 cup, chopped Onions, raw
    1.0 dash Salt
    1.0 dash Pepper, black

Directions

Peel and roughly chop sweet potato. Add potato, rinsed lentils, chopped onion, broth, sriracha and chopped apricots. Bring to a boil and simmer until potatoes and lentils are cooked. Let cool and add coconut milk. Puree in blender and season with salt and pepper. Heat and serve.
