Introduction

My husband and I served this stew at our fall wedding. It's very fragrant and tender, with amazing color. For a more festive occasion serve in a turrine thats hidden in a hollowed out pumpkin. Ingredients

    1lb Beef Chuck, chopped into bite size pieces
    16oz Red Wine, any cheap table wine will work
    1 Large Potato, chopped
    1 Large Carrot, chopped
    1 Large Onion, chopped
    1 5" Sweet Potato, chopped
    Salt and pepper to taste

Directions

Lightly spray the inside of a large saucepan.
On a medium heat brown the beef and onions, until the onions are transparent.
Next add the red wine in small amounts, then all other ingredients. If the wine does not completly cover other ingredients, add a little water until its level.
Stir well and bring to boil then reduce heat to low and cover.
Let cook for about 4 hours on a low heat. Stir occasionally to prevent possible sticking and add a little more water if necessary.
Serves 4 adults

    my family really like this. I liked using the sweet potatoes in it as well. - 11/25/07
