Ingredients

2 tsp Cinnamon, ground
1 tsp Vanilla Extract
1.75 cup Applesauce, unsweetened
3 tsp Baking Powder
2 tbsp *Flax Seed Meal (ground flax)
3 cup dry Oatmeal (plain)
2 cup slices Apples, fresh with skin
Directions
I started by dumping unsweetened applesauce into a strainer and let sit. Use just 1 1/2 cups of solid pulp and use the liquid that drains out in place of some or all of the 6 TBL of water needed with the Flax seeds.
I have since noticed that if I just increase the applesauce to 1 3/4 I have plenty of applesauce and liquid. May need to add a TBL of water or 2 depending. If you have the time, certainly the original directions are more accurate, but the alternative works too.
Peel one large apple and chop into medium chunks. Used a electric chopper to mince the skin. Set aside.
Measure dry ingredients, mix together. Add wet ones. spray pan with some Pam, divide up and bake for 30 minutes at 350 degrees
Note: 12 muffins = 20 minutes at 350 degrees or
6 Lg. muffins = 30 minutes at 350 degrees.
