Introduction

for the rhubarb lovers out there, great fro breakfast for the rhubarb lovers out there, great fro breakfast
Number of Servings: 24

Ingredients

    1/2 cup oil
    2 eggs (large)
    1 tsp vanilla
    5 cups flour
    2 tbsp. baking powder
    1 tsp salt
    4 cups diced rhubarb
    1 1/2 cups sugar
    2 cups skim milk

Directions

mix oil and milk together add eggs and mix together, add vanilla, salt, baking powder, flour mix, fold in rhubarb.
Fill muffin tins 3/4 full.Bake at 375 for 17-23 minutes. makes 24 muffins. If wanted sprinkle with cinnamon sugar on top before baking (adjust calories if added) I hope that you like these they are filling.
