Ingredients

    2 lb Pork loin, lean
    0.5 tbsp Canola Oil
    3 tbsp Lemon juice
    3 clove Garlic
    0.5 tsp ground Cumin
    0.5 tsp Salt
    0.25 tsp Crushed Red Pepper
    1 tbsp Canola Oil
    1 cup Water, divided
    2 Tbsp Corn Starch


Directions

Cut pork into 3/4" cubes. Marinate in 1/2 Tbsp oil, lemon, garlic, cumin, salt, and crushed red pepper at least 8 hr in refrigerator. Heat 1 Tbsp oil in large skillet or wok until hot. Reserving marinade, brown pork on all sides. Add reserved marinade and 1/2 cup water, cover, and simmer until pork is tender, ~30 min. Stir cornstarch in remaining 1/2 cup water, add to meat, and heat through until thickened.
