Introduction
I adapted this from a recipe for Whole Wheat Chocolate Chip Oatmeal Cookies submitted by PrairieDawnPam. You can add raisins, nuts or chocolate chips. Ingredients

1 Haas avocado
1/4 cup Smart Balance Spread
1/4 cup unsweetened applesauce
1 cup brown sugar
1/4 cup white sugar
1/4 cup splenda
1/2 cup liquid egg substitute
2 teaspoons vanilla extract
1 1/4 cups whole wheat flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 teaspoon pumpkin pie spice
3 cups steel cut oats
Directions
Preheat oven to 325.
Peel, pit, and mash Haas avocado in a 1 cup measuring cup.
Add 1/4 cup smart balance.
Add enough applesauce to make a cup.
Cream this mixture together with sugars.
Cream in egg substitute and vanilla.
Add dry ingredients one at a time mixing well.
Drop by heaping teaspoonfuls onto ungreased baking sheet.
Bake 12 minutes.
Allow cookies to cool on baking sheet for 5 minutes before tranferring to cooling racks to finish cooling.
