Introduction

Low carb, lower fat version of My favorite comfort food, Chicken Florentine. I work nights, so making this in the slow cooker is ideal. I pop everything into the slow cooker when I get home from dropping off the kids at school and it cooks while I sleep so dinner is ready because the time I get back from picking them up from school in the afternoon. Ingredients

    32 oz Tyson boneless, skinless chicken breast
    4 cup Spinach, frozen
    8 oz Great Value 1/3 less fat Neufchatel cream cheese
    6 tsp Garlic Select Minced Garlic
    .5 cup Parmesan Cheese, grated
    4 tbsp Blue Bonnet Light Margarine
    6 serving Italian Seasoning, 5th Season - 1 tsp (by J2CCAUSBIE)
    .5 tsp Tabasco Sauce
    1 cup Great Value Fancy Shredded Low-Moisture Part-Skim Mozzarella Cheese
    0.125 cup, chopped Onions, raw
    2 tsp Mrs. Dash (R) Original Blend
    16oz Sliced White Mushrooms

Tips

If you want to keep the meal low carb, you can eat this dish as is, over cauliflower rice or on a low carb tortilla wrap. If you are in more of a hurry, this can be cooked on high setting for 4 hours.


Directions

Season chicken with mrs dash and Italian seasoning and place in slow cooker. Next add frozen spinach, mushrooms and onions on top of chicken. Sprinkle Tabasco sauce, minced garlic on top then add the Parmesan cheese, cream cheese, and margarine. Cook on low for 6 hours then switch setting to keep warm. Before serving, use a fork to break up the chicken and mix all the ingredients together. Before serving, add 1 cup of mozzarella to mixture and stir in it to evenly distribute the cheese throughout. Can be served over any pasta you prefer.
