Ingredients

    6 cup Cauliflower, raw
    2 cup, diced Ham, regular (11% fat)
    .5 cup Low fat cream cheese
    .75 cup Sour Cream
    2 tbsp Parmesan Cheese, grated
    .25 cup, chopped Onions, raw
    .5 tsp Pepper, black
    1 cup, shredded Cheddar Cheese

Directions

Preheat oven to 350 degrees. Fill medium pot half full with water. Add the salt and bring to a boil. Cut up cauliflower into small flowerettes, discarding the leaves and core. Put cauliflower pieces into the water and cook at a low boil until it starts to get barely soft. Check often and don't over-cook. It will soften more in the oven.
While cauliflower is cooking, cut ham into very small cubes and slice green onions. Put cream cheese into a glass dish or cup and soften in microwave for a few seconds, or soften on counter top or on pre-heating oven. When cream cheese is soft, stir in sour cream, Parmesan, and onions.
When cauliflower starts to soften, drain well in colander at least 5 minutes. Put cauliflower back into pot and mash with potato masher until barely mashed with quite a few chunks left. Stir in the cheese mixture and combine well, then gently mix in diced ham. Season to taste with black pepper.
Spray glass pan (about 8x10) with non-stick spray. Pour cauliflower mixture into dish, spread out evenly, and sprinkle with the cheddar.
Bake 30 to 35 minutes, or until cheddar is melted and lightly browned, and all the mixture is hot and starting to bubble. Let sit 10 minutes for any liquid to be absorbed, then serve hot.
