Introduction

A big, green, low calorie but filling veggie soup to eat all week long. Add diced firm tofu, meat or fake meat crumbles, parmesan cheese, sautéed mushrooms, etc. each evening to mix it up. Ingredients

    4 cups chicken broth
    8 cups water
    8 tsp Better Than Bouillon (Chicken)
    10 oz. frozen green beans
    10 oz. frozen carrots
    10 oz. frozen peas
    10 oz. frozen spinach
    1 medium green cabbage, sliced into strips
    1 bunch celery, diced
    5 cloves garlic, minced
    2 medium yellow onions, diced
    1 green bell pepper, diced
    2 large zucchinis, diced
    2 tbsp extra virgin olive oil
    1 packet Lipton Onion Soup Mix
    S&P

Directions

Dice everything up to about the same size pieces. Heat oil to medium-high heat. Cook aromatics (onion, bell pepper, celery) first. Add garlic, stirring for 1 minute. Add broth/water/Bouillon and all the rest of the ingredients, and S&P to taste. Simmer until done. Enjoy!
