    1.0 dash Pepper, black
    0.14 tsp Salt
    2.0 tbsp Cider Vinegar
    6.0 cup Spinach, fresh
    0.25 cup Red Onion Raw (1/4 cup, 40g or 1.4oz)
    2.0 serving Stevia Extract In The Raw Sugar Substitute [1 packet]
    4.0 serving Egg Hard Boiled (1 serving = 1 large egg boiled)
    4.0 serving thick cut hickory smoked bacon


Put spinach in large bowl. Sprinkle with pepper to taste. Cook bacon in lg skillet til crisp. Remove bacon and cool on paper towels, reserving the bacon fat in the skillet. When bacon is cool, crumble and set aside. Dice boiled eggs and set aside. In a small bowl, mix vinegar, salt, and stevia. Set aside. With bacon fat on medium heat, cook and stir onions about two mins or til desired softness. Add garlic and cook one minute. Add vinegar mixture and heat til bubbly. Remove from heat. Let cool a minute then drizzle on top of spinach. Toss to coat to wilt spinach. Top with crumbled bacon and diced boiled eggs Serving Size: Makes 4 servings
