Introduction
This was my first attempt to create a very high fiber, low fat muffin. Very tasty and moist - could lower the fat even more by leaving out the oil and wheatgerm. Ingredients

1 cup flour
1/2 cup whole wheat flour
3/4 cup milled flax seed
3/4 cup wheat bran
1/4 cup brown sugar
2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1 1/2 cups finely shredded carrots (5 small)
1/2 cup raisins, well-rinsed
5 prunes, finely chopped
2 eggs, beaten
2 large apples, peeled and finely shredded
1 cup skim milk
2 tbsp canola oil
1 tsp vanilla
Directions
Mix together dry ingredients, add carrots, raisins and prunes and mix again.
Combine wet ingredients. Add to dry ingredients all at once and stir just to moisten.
Bake at 350 for 17-19 minutes.
Makes 20 medium muffins.
