Tips
BLUEBERRIES: If you purchase frozen wild blueberries (such as from Trader Joe's) you may want to use 2 cups of blueberries. You can also use regular fresh blueberries in place of the regular frozen blueberries. Wild blueberries are very small, so more can be used.
UNSWEETENED VANILLA ALMOND MILK ***any milk will work
MAPLE SYRUP ***Honey would work too
COTTAGE CHEESE ***Greek yogurt may be a good substitute
Recipe is calculated with the ingredients listed so you would need to change the information if you substitute with one of the other items or if you top with more blueberries and a splash of milk

Directions
Preheat oven to 375 degrees F. and spray a baking dish (8x11 or 9.13 depending on what you have) with a natural cooking spray. If you would prefer your baked oatmeal thicker, use the smaller sized baking dish.
Combine dry ingredients (oats, baking powder, cinnamon, salt) in a large bowl. Toss in blueberries. Allowing the blueberries to be covered by the oat powder will help them from sinking to the bottom of the mixture.
Stir in the rest of the ingredients (milk, beaten egg, vanilla, maple syrup, cottage cheese).
Transfer oatmeal mixture to baking dish.
Cover baking dish with foil and bake at 375 degrees F. for 30 minutes. Remove the foil and bake for another 15-20 minutes.
OPTIONALl: Serve with fresh blueberries and a splash of milk. This oatmeal is not overly sweet so you may wish to add a packet of sweetener to your serving of oatmeal
