Introduction

Ingredients

1 cup bulgur wheat
1/4 t salt
2 tablespoons walnut oil
3 tablespoons fresh lemon juice
1 shallot, minced
1/2 pound fresh sweet cherries, halved and pitted
1/2 cup chopped fresh tarragon, chives or parsley or any mixture thereof
1/4 cup chopped, toasted walnuts
Directions
Cook bulgur in a medium saucepan with 2 cups water and 1/4 teaspoon salt. When mixture comes to a boil, cover the saucepan, reduce heat to low, and cook for about 15 minutes, until all water is absorbed and bulgur is tender. Pour bulgur into a medium glass or ceramic bowl.
Meanwhile, in a glass jar with tight fitting lid, make dressing by mixing together oil, lemon juice, and shallot; add salt and pepper to taste. Pour dressing over bulgur and toss to combine. Refrigerate, uncovered, until cool. Add cherries, chopped fresh herbs and walnuts to salad and mix again. Season to taste with salt and pepper before serving.
