Ingredients

    1 Med. Green Bell Pepper
    1 Med. Yellow Bell Pepper
    1 Med. Red Bell Pepper
    1 Cup Cauliflower
    1 Med. Red Onion
    2 Cloves Garlic
    1 Cup Zucchini (and/or Yellow Squash*)
    4 Small Mushrooms,
    1 Med. Carrot
    1 tsp. Extra Virgin Olive Oil
    1 tbsp Balsamic Vinegar
    Pepper, to taste

    *Adding squash may change the calorie count

Tips

Try mixing up your spices; rosemary, basil, etc.


Directions

First, pre-heat your oven to 350 degrees. Next, chop all of the vegetables to desired size (the smaller the better in my opinion) then combine in one large bowl. Add the balsamic vinegar, olive oil, and the pepper if desired. Mix everything together and pour onto a baking pan covered in parchment paper. Bake for 15 minute and enjoy!

Serving Size: Two medium bowls.
