Ingredients

    2 TBSP olive oil
    8oz. boneless, skinless chicken breast, cut into chuncks
    1/4 cup finely chopped onions
    2 cloves garlic, minced
    1 tsp. ground cumin
    1/2 tsp salt
    1/2 tsp chili powder
    1/2 tsp cayenne pepper
    14 1/2 oz. can chicken broth
    15 1/4 oz. corn, undrained
    15 1/2 oz. can black beans, drained and rinsed
    14 1/2 oz. can Mexican style tomatoes with green chilies

Directions

In a saucepan, heat olive oil over medium heat. Add chicken, oinion and garlic; saute until chicken is opaque, about 3 minutes. Add the cumin, salt, chili powder and cayenne pepper. Cook two minutes until fragrant. Pour in the chicken, broth, corn (with liquid), black beans, and tomatoes. Bring to a boil. Reduce heat and simmer, uncovered for 15 minutes.
