Introduction

A not too sweet, super-healthy muffin. The perfect size and lovely as a sweet bread. Moist without need for oil or butter, due to apples, honey and almond milk. Ingredients

    1 cup Flour, whole grain
    1 cup Quaker Oats Old-Fashioned Rolled Oats
    25 grams Baking Powder
    3 tbsp Honey
    1 serving Vanilla Essence 1Tbl (by UNIDENT)
    2 tsp Cinnamon, ground
    2 medium (2-3/4" dia) (approx 3 Apples, fresh with skin
    1 cup almond breeze almond coconut milk original

Directions

Grate Apple with skin, then add to bowl with all other ingredients. Mix by hand until well combined. Spray a muffin tray with nonstick spray. Pour mixture evenly into tray. Bake in moderate oven (I use fanbake 160 degrees C) for 35-40 mins.


Serving Size: Fills 6 standard sized muffin cups perfectly
