Introduction
The hot peppers are optional, I use a dozen or so scotch bonnet or habanero, Bhut when in season (if they grow) I like it hot. For no heat leave out the peppers. Try to add at least a jalapeno as it brings out the flavors. I eat this over brown rice, even though it has rice in it. Ingredients

10 serving Gumbo File, Zatarain's Pure Ground (by LATONIA38)
2 oz bacon, Pork, cured, raw
5 pepper Serrano Peppers
16 serving zatarians gumbo mix (by KUCSMASE)
14 cup (8 fl oz) Water, tap
1.5 cup, diced Celery, cooked
1.5 cup, chopped Green Peppers (bell peppers)
2.5 cup slices Okra
16 oz Polish Pork Sausage
16 oz Shrimp, cooked
2 cup, chopped Onions, raw
Directions
In a large pot with a heavy bottom, cook the bacon to slowly release the fats over a medium heat until there is enough grease to sauté the veggies (hot peppers can be added here or left out) until just before starting to caramelize, add the sliced sausage and water
I use 2 boxes of zataran's gumbo mix and cook as per directions for cooking time. About 10 min before it's done I add the raw whole shrimp, hot peppers and zatarans gumbo file (2-3 Tablespoons to thicken) When it thickens up and shrimp are pink, it's time to serve. I like it over brown rice, or whole Thai or Vietnamese jasmine rice.
