So easy. So delicious. Grind up the grahams in your blender or food processor and instantly you have a sweet, crumbly base for these low-fat goodies. Add as many healthy blueberries as you like! Ingredients

    low fat cinnamon graham crackers, finely
    crushed (about 3 cups crumbs)
    1/4 cup sugar
    1 Tbsp. Baking Powder
    1 egg
    1 cup fat-free milk
    2/3-1 cup blueberries

Directions

After crushing graham crackers, combine all dry ingredients. Beat egg and milk in separate bowl, then combine with graham mixture just until moist. Gently fold in blueberries. Bake at 375 degrees for 18-20 minutes.

Yield: 12 Muffins

    These were great. I used a cup of blueberries and they turned out wonderfully.
    Made them a second time and added a very ripe banana. It upped the calories per muffin by 6, but they were more moist and a little sweeter.

    These were great, I love graham crackers. Couldn't believe they were that low cal so I added up everything and it sure is correct! I added about 1/3 cup of flax seeds to the recipe just for some extra healthiness (ground flax meal would work better) - 7/8/08

    How much is 3 cups?? would that be like a full box of graham crackers or a sleeve or what? - 10/31/10

    I use two sleeves or 18 full sheets of crackers.
