Introduction

I make this much like the Olive Garden Minestrone, but leave out the pasta. You can add some small cooked pasta as desired in individual bowls. This soup has so much flavor, you don't miss the pasta. Ingredients

    0.50 tsp Oregano, ground
    2 tbsp Parsley, dried
    2 tsp Pepper, black
    1 tbsp Basil
    1 tsp Salt
    3 1tsp Olive Oil
    2 large (7-1/4" to 8-1/2" long) Carrots, raw
    4 stalk, large (11"-12" long) Celery, raw
    8 clove Garlic
    1 large Onions, raw
    6 cup Spinach, fresh
    1 can (6 oz) Tomato Paste
    2 medium Zucchini, baby
    6 fl oz Red Wine
    4 cup Vegetable Broth
    4 tsp Better than boullion beef flavored base - 1 tsp
    3 cup Green Beans, Frozen from Costco
    2 cans Kidney beans dark red
    2 cans Navy Beans
    2 cans Diced Tomato (by LILSWEETIE)

Tips

I didn't include the pasta or parmesan cheese in the nutritional value count. I like mine without either.


Directions

Pour olive oil into large stock pot. Add onions, celery, carrots & garlic. Saute on medium heat till onions translucent. Add the rest of the ingredients & bring to boil. Turn down to a simmer & allow to cook. Can be served over pasta or not. Can also be sprinkled with fresh ground Parmesan if you choose.

Serving Size: Makes 20 - 1 1/2 cup servings
