Introduction

Ingredients

4 qts (16 cups) water
1 large ham bone
216 oz bag green split peas.
3 c. cubed ham
7 large carrots, sliced
2 large sweet potato, peeled and cubed
1 small onion, diced
6 T fat free sour cream
1 bay leaf
salt
pepper
thyme (I use 2 tsp. use more or less
depending on preference)
1 tsp cayenne
1 T aged balsamic vinegar
Directions
Place water and soup bone in large (5 -7qt) pot.
Simmer on med-low for 2 hours. Remove bone and discard. (If needed, add ham or chicken bouillon cubes to intensify broth flavor)
Rinse and sort split peas removing any damaged ones, or debris. Add peas, carrots, sweet potato, onion,bay leaf and thyme to broth. SImmer on medium for an hour. Add sour cream. With immersion blender coarsley blend soup, leaving chunks. Cook an additional 20 minutes. Add Ham, balsamic and cayenne. Cook until ham is heated through.
Serve.
1 1/2 c. is one serving. Is delicious with rosemary bread or topped with a handful of garlic herb croutons.
