Ingredients

    1 cup dried cranberries
    1 cup, finely chopped walnuts
    1 cup old fashioned oatmeal
    1 cup flour
    3/4 cup granulated Sugar
    1 large egg
    1/4 cup vegetable Oil
    1/4 cup wheat germ
    1/4 cup oat bran
    1 cup 1% milk
    1 tbsp. baking powder
    1 tsp baking soda
    1 tsp salt

Tips

May substitute applesauce for vegetable oil.


Directions

Preheat oven to 375 In large cup or medium bowl soak oat bran, oatmeal and wheat germ in milk for 10 to 15 minutes. In lg. bowl mix all remaining dry ingredients, set aside. Add oil and lightly beaten egg to milk mixture. Make a well in dry ingredients and add milk mixture, stir until just mixed. DO NOT OVERMIX! Bake in prepared muffin pan 15 to 20 minutes, inserted toothpick should be clean.

Serving Size: Makes 24 mini muffins or 12 regular muffins
