Ingredients

    4 cup Simple Truth Organic Vegetable Broth, entire 4 cup box
    4 cup (8 fl oz) Water, tap , preferably filtered
    3 oz Baby Carrots Grimmway Farms (3 oz = about 10/11 baby carrots) I small package
    16 oz V8 Vegetable Juice, Low Sodium
    1 cup Tomatoes - sm cherry tomatoes (blended with the V8 juice in blender) or a 28oz can of crushed tomatoes)
    5 stalk, large (11"-12" long) Celery, raw and chopped/sliced to size you prefer
    2 cup Goya Black Beans, I buy the largest can and drain beans in colander the rinse in water
    1 tbsp Curry powder
    1 Bay Leaf
    1 tbsp Chili powder
    1 tsp Pepper, black
    1 tsp Morton Corse Sea Salt
    1 tbsp Turmeric, ground
    3 cup Green Giant Cut Green Beans, can
    1 serving Garlic Minced 1 Tsp (by TRISHC50)
    5 oz Carrot chips(raw carrots cut in medallions with crinkles, not actual chips)
    Simple Truth 8oz pkg Mushrooms, Fresh, White Button, Sliced

Tips

Other beans can be used in leui of the black beans, it's a matter of taste. I usually make this with canned chickpeas.
Also taste great puréed in a blender for a healthy soup.


Directions

Start buy setting your crockpot on LOW for about 7 hours. Can be cooked on low for 6 to 9 hours, but I prefer 7 hours.
Add the 32oz box of Simple Truth Organic Vegetable broth to crockpot.
Next add spices and garlic to the liquid.
Follow this in any order of adding veggies and beans to the pot. My crockpot got so full I had trouble putting the lid on straight! I usually add the cabbage on top of the initial liquid broth then the carrots and celery, followed by the beans and crushed tomatoes or V8 with tomatoes, I prefer the V8 juice for the nutritional value and flavor. Any tomato or vegetable juice you prefer would do but might change the calorie count.
Add the green beans, I use 3 cans of the 50% less sodium or salt free, when I can find them, then I strain and rise them over sink in a colander like the black beans.
I also rinse the fresh mushrooms in the colander as well.

Serving Size: Makes about 10 1 cup servings.
