Ingredients

3 cup Old-Fashioned Rolled Oats
0.5 cup, Chopped Walnuts
0.5 cup, Cashew Pieces
0.5 cup, Whole Almonds, coarsely chopped
3 cups Coconut Chips - organic, unsweetened
6 tbsp Dark Brown Sugar
6 tbsp Honey
4 tbsp Canola Oil
.25 tsp Vanilla Extract
.25 tsp Cinnamon, ground
.5 tsp Coarse Ground Kosher Salt
0.25 cup Crystalized Ginger, cut into a small dice
5 oz Papaya Chunks (dried), diced
1.5 oz 70% Dark Chocolate, coarsely chopped
Tips
This is a sweeter granola. You can totally leave out the brown sugar if you prefer one that is less sweet.
This recipe can be endlessly varied by changing the combination of nuts, fruits, and spices, but i love this particular combination.
Directions
Preheat oven to 250.
In large bowl, combine dry ingredients: oats, nuts, coconut chips, and brown sugar. mix well.
In small bowl, combine wet ingredients and spices: honey, oil, vanilla, cinnamon, and salt.
Pour wet mixture over dry and mix well. (Hint: your fingertips may be the best way to assure even distribution of all ingredients.)
Divide oat mixture between two (dark) cookie sheets and place in oven. Total cooking time will be between 75 minutes and 90 minutes depending on how brown (crunchy) you like your granola. stir granola every 15 minutes as it bakes to assure nice, even browning.
Remove from oven and stir in dried fruits. allow to cool slightly and then sprinkle chocolate over all. (If you like your chocolate to stay in firm chunks, wait until granola is completely cool before adding.
Store in an airtight container.
