Introduction

An easy to make vegetarian casserole. An easy to make vegetarian casserole.
Number of Servings: 8

Ingredients

    1 pound dried lentils
    2 cans (14.5 oz.) vegetable broth
    1/2 tsp. salt
    1/4 tsp. pepper
    1 bag (16 oz.) frozen broccoli, califlower and carrots
    1 can (10 3/4 oz.) golden mushroom soup

Directions

1. Mix lentils, broth, salt and pepper in 3 1/2 to 6 quart slow cooker
2. Cover and cook on low heat setting 2 - 2 1/2 hours or until lentils are tender
3. Stir in vegetables and soup
4. Cover and cook on low heat setting about 30 minutes or until vegetables are tender

Makes 8 1 cup servings
