Introduction

Tasty chicken (I used thighs because that is what I had on hand, but breasts have much less fat and could be substituted nicely), chow mein noodles, and iceberg lettuce topped with a tangy dressing. Yum! Ingredients

    Sauce:
    4 tablespoons brown sugar
    4 teaspoons soy sauce
    1 tablespoon sesame oil (more if desired)
    1/2 cup vegetable oil
    6 tablespoons rice vinegar

    Salad:
    1 6oz package of dried chow mein noodles (can be found in the grocery store in the ethnic food section)
    1 head iceberg lettuce, chopped
    6 chicken thighs, cooked, trimmed of as much fat as possible, and cubed (can use 4 chicken breast as substitution)
    4 green onions, chopped

Directions

Cook chicken, cube.
Combine ingredients for salad dressing and refrigerate for 20 minutes.
Combine the lettuce, chicken, green onions, and chow mein noodles in a large bowl.
Top with chilled dressing, toss to coat.
Enjoy!
