Ingredients

salad:
1 Orange
0.25 cup pieces Walnuts
2 cup cooked beets
cooked beets
3 beets (red, gold, or both)
1/2 cup red wine vinegar
1/2 orange
Directions
to cook beets:
approximately 3 beets equal 2 cups. i like a mix of red and golden beets. rinse beets and place in pot. (you can do the red and gold separately if you'd like to keep the colors). cover beets with cold water. add 1/4 cup red wine vinegar and 1/4 of a whole orange to pot. slowly simmer about an hour or until the center can easily be pierced through. drain. allow to cool. slip skins off carefully, and dice.
peel orange into sections, remove membranes, and chop.
mix diced beets, chopped orange, and walnuts together and let stand at least an hour.
add salt and pepper if you like.
serve over a small dollop of whipped got cheese with a slight drizzle of orange-infused oil over all.
