Introduction

Ridiculously rich - almost too rich for even a special occasion. Definitely NOT a SparkPeople recipe. But oh, so delicious. The peas are my own addition. Garlic and hot pepper are good, too. Ingredients

    1 stick unsalted butter
    1 cup soy milk, divided (original calls for cream)
    1 cup grated cheese (Parmesan, Romano)
    3 large egg yolks
    1 t freshly ground black pepper
    1 pound fettucine or other pasta
    1 cup frozen peas, defrosted

Directions

Cook the pasta according to directions. Melt the butter in a large saucepan over medium heat. Add 2/3 cup of the soy milk and the cheese, stirring occasionally until melted and smooth. Pour the cooked and drained pasta, along with the peas, into the saucepan. Whisk the egg yolks with the reserved soy milk. Add to the saucepan. Makes 4 decadent servings.
