Ingredients

3 medium (7" to 7-7/8" long) Banana, fresh
1.5 cup Flour - Gold medal all purpose flour
3 tbsp Egg substitute, liquid (Egg Beaters)
.5 cup Butter, salted
.75 cup, packed Brown Sugar
1 tsp Cinnamon, ground
1 tsp Vanilla Extract
1 tsp Baking Soda
1 tsp Baking Powder
Tips
Could use a cream cheese icing or perhaps an apple flavored icing.
Directions
Preheat oven to 350F
Peel and mash frozen bananas when they become slightly thawed.
Add brown sugar, cinnamon and vanilla. Mix well.
Add baking soda and powder. Mix well.
Melt butter and add when cooled. Mix well.
Add flour and mix well.
Spray muffin tins with cooking spray or use paper cups.
Divide into 12 cups and bake for 10-15 minutes until toothpick inserted in center comes out clean.
Remove from cooking pan and cool.
