Introduction
This is an easy and quick warm potato salad recipe that can also be served cold. I don't like raw onion in my potato salad so I lightly saute them until translucent in a half a tablespoon of olive oil. You can drop that step if you want to save a few calories and put them in raw. Ingredients

0.25 tsp Paprika
0.25 tsp Pepper, black
0.5 tsp Salt
1.33 tbsp Cider Vinegar
8.0 tbsp Kraft Mayo Light Mayonnaise (Mayo)
2.0 medium (4-1/8" long) Scallions, raw
0.5 tbsp Extra Virgin Olive Oil
632.0 grams Red Potato
14.0 gram(s) Cheese, Frigo Shredded Parmesan Cheese (1/4 cup)
5.0 tsp Dijon Mustard (Great Value)
3.0 oz Onion, sweet, raw
Directions
Boil approximately 7 small to medium red potatoes and lightly salted water until tender. Meanwhile in a small bowl combine light mayonnaise parmesan cheese Dijon mustard cider vinegar salt pepper and paprika. While the potatoes are boiling I lightly saute my onions and a little bit of extra virgin olive oil until lightly translucent then I add them to the dressing with the scallions. When potatoes are done and cool enough to handle dice them into quarters and toss them with the dressing.
