Ingredients

Salad:
1 1/2 cups cooked brown rice
1 cup matchstick carrots
4 large green onions, sliced--white and green parts
1 (15 oz.) can low-sodium chickpeas, rinsed and drained
1/3 cup dates, chopped
1/3 cup golden raisins, chopped
1/3 cup dried Mediterranean apricots, chopped
1/4 cup walnut pieces
a small bunch of cilantro leaves, minded with scissors
Dressing:
1/2 tsp cumin, ground
1/3 cup olive oil
2 tbsp lemon juice, fresh
1 tbsp pure maple syrup (or agave syrup)
1/2 tsp Morton Lite Salt 50% Less Sodium Than Table Salt
1/8 tsp chili powder
Directions
All ingredients should be brought to room temperature if they are not. All ingredients should be pre-measured and ready to mix.
1. Mix salad ingredients together in a medium bowl.
2. Whisk dressing ingredients in a small bowl.
3. Pour dressing over salad ingredients; toss. Let rest 10 minutes and serve.
Serving Size: makes 4 1/2 servings (1 cup each)
