Ingredients

    .25 cup Olive Oil
    1 large Onions, raw
    2 tbsp *McCormick ground cumin
    2 tsp Dried Oregano
    2 tsp Cinnamon, ground
    2 tbsp ground corriander
    3 tbsp Chili powder
    .50 tsp Black Pepper (Ground)
    2 tsp Kosher Salt
    6 serving Garlic
    3.5 cup Organic Diced Tomatoes
    1 Jalapeno Peppers
    3 serving chipotle chile pepper in adobo
    1 can (6 oz) Tomato Paste
    12 oz Deschutes Black Butte Porter Beer 12 oz
    1.875 cup Beans, black
    1.875 cup Beans, red kidney
    1.875 cup Beans, pinto
    2 tbsp Lime Juice, juice of 1 lime
    2 serving Dark Chocolate, Trader Joe's Pound Plus 72%

Directions

Cook onions in the oil in a soup pot for 15 minutes. Add all of the spies and stir, Cook while stirring constantly for another 5 minutes. Add diced tomatoes, jalapeƱos, and chipotle peppers and bring to boil. Stir in the tomato paste and beer (or water) until smooth. I like to use a nice dark porter or a stout but it is up to personal preference. Lower the heat, cover and let simmer for 45 minutes. Stir in the beans, and lime juice and simmer for another 15 minutes. Add chocolate and stir until melted. Serve immediately if desired but to enhance the flavor transfer to crock pot and cook on low for four hours. Divide into eight servings. Freezes well and easy to reheat. Also makes great topping for some veggie dogs...enjoy! Serving Size: 8 servings
