    1.75 Cup flour
    .5 cup splenda
    2 tsp baking powder
    .5 tsp baking soda
    .25 tsp salt
    1 cup mashed bananas
    .5 cup egg substitute
    1 tsp vanilla
    .5 cup chopped walnuts
    .5 cup raisins


Beat bananas, egg substitute, splenda, and vanilla until smooth. Combine flour, baking soda, baking powder, and salt in a small bowl. Stir fjour mixture, walnuts, and raisins into egg and banana mixture until just combined. Pour into loaf pan sprayed with nonstick spray. Bake at 350 degrees for about 40 minutes until the crust is brown and a toothpick comes out clean. Makes approximately 12 slices.

  • I agree it could use another banana. I used whole wheat flour and added some cinamon. It wasn't real sweet more like a bread not a cake which it is suppose to be. My grandson loved it. I didn't put raisins in it. Baked it in 3 small loaf pans. So I could freeze it and bring out a little at a time. - 8/10/08
