Ingredients

    1 can Rotel Tomatoes & Green Chilies
    16 oz Velveeta Cheese
    1 lb box of medium shells
    18 oz of leftover roasted chicken

Directions

Cook shells in boiling water until 'al dente'. While shells are cooking, heat up Rotel in a sauce pan and gradually add the Velveeta, stirring constantly. When Velveeta mixture is hot & smooth, turn off the heat. Heat up leftover chicken. Drain shells and put into a very large mixing bowl. Add Velveeta mixture and the chicken to the shells and mix well.

Makes 24, 2 cup servings.

    Very Good
    Very delicious recipe...any suggestions on how to get the sodium decreased? I also used bonesless skinless chicken breasts instead of leftover chicken. Good stuff! - 2/17/10

    Instead of using the canned Rotel, you may be able to use fresh / frozen green chile chopped, fresh tomatoes and some cilantro.
