Introduction

Ingredients

    0.5 cup Whole Wheat Flour
    .75 cup Flour, white
    .75 tsp Baking Soda
    1.5 tsp Cinnamon, ground
    .5 tsp Nutmeg, ground
    .25 tsp Salt
    1.25 cup, mashed Banana, fresh
    .3 cup Maple Syrup
    2 tbsp Extra Virgin Olive Oil
    2 serving Egg white, large
    1.5 tsp Vanilla Extract

Directions

Combine dry ingredients, mix, form a well. Combine maple syrup, olive oil, eggs and vanilla. Whisk together. Pour wet ingredients and mashed banana into center of well and mix with dry ingredients until just mixed. Scoop into muffin pan with baking cups. Bake at 350F for 15 minutes or until toothpick comes out clean.
