    1 orange - juice & zest
    1 lemon - juice & zest
    1 lime - juice & zest
    2 tsp chili powder
    2 tsp cumin
    1/4 cup olive oil
    1/4 cup vinegar

    1.5 lbs chicken breast, cut into cubes

    1 large red onion, cut into wedges
    2 zucchini, cut into 8 pieces
    2 yellow squash - cut into 8 pieces

    Black pepper

    8 skewers

    5 cups mixed salad greens


combine fruit juice & zest with cumin, chili powder, and 2 TBSP olive oil. Add chicken and stir well to cover. Put in refrigerator to marinate for at least 1 hour.

If using wooden skewers, about 20-25 minutes before serving, soak in water for at least 20 minutes (keeps them from burning). Mix together the remaining 2 TBS olive oil with the vinegar. Brush squash & onions with oil & vinegar mixture.

Preheat grill to medium high

Thread skewers with veggies and chicken. Sprinkle with black pepper.

Cook kebabs 7-10 minutes, until chicken is cooked through, turning often.

While kebabs are cooking, toss salad greens with remaining oil & vinegar and split among 4 plates. Put two cooked kebabs on each plate and serve immediately.
