Ingredients

    5.0 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
    32.0 tbsp Shredded Coconut Unsweetened (Bob's Red Mill)
    3.0 serving honey (raw, trader joes, organic) (1 tbs)
    6.0 serving Chocolate, Lindt Excellence Chili Dark Chocolate (4 squares)
    1.0 tsp Salt

Directions

First line a laof pan with wax paper. Put coconut flakes, honey and 4tbs coconut oil in food processor and mix till combined and begins to stick together. Place coconut mixture in loaf pan and evenly spread and flatten. Place in freezer for 1 hour. Melt chocolate with remaining coconut oil 15 sec intervals in microwave until melted and smooth. Remove candy from loaf pan and cut into 1/2 inch sticks then cut those in half. Using fork dip in chocolate to cover and place on wax paper covers sheet pan. While chocolate is still wet sprinkle course salt sparingly then place in fridge to set. Approx 30 min after remove and enjoy a portion sizes piece as a snack or for dessert.

    I just made this and it's pretty good. But I did tweet it, though. I added 1/2 cup of mixed nuts and 9 grams of cacao nibs to it and I didn't have the chili dark chocolate so I just used 6 tablespoons of regular baking chips. I will be making this again. - 9/17/17
