Ingredients

3.0 large egg
1.0 cup vegetable oil
3.0 tsp vanilla extract
2 1/4 cup sugar
2.0 cup, shredded zucchini
3.0 cup flour
1.0 tsp salt
1.0 tsp baking powder
0.25 tsp baking soda
1.0 tbsp cinnamon, ground
1.0 pint Blueberries, fresh
Directions
Preheat oven to 350 degrees
Lightly grease 4 mini loaf pans.
In a large bowl, beat together eggs, oil, vanilla & sugar.
Fold in zucchini.
Beat in the flour, salt, baking powder, baking soda, and cinnamon.
Gently fold in blueberries.
Transfer batter to the mini loaf pans.
Bake 50 minutes or until a tester comes out clean.
Cool 20 minutes in pans, then turn out onto wire racks to cool completely.
Serving Size: 32 1 inch slices, 8 slices per loaf
