Ingredients

    4 cup, chopped Onions, raw
    8 medium Carrots, raw
    6 stalk, large (11"-12" long) Celery, raw
    4 medium (2-1/4" to 3-1/4" dia.) Potato, raw
    6 serving Pacific Natural Foods Organic Low Sodium Vegetable Broth, 1 cup
    6 cup (8 fl oz) Water, tap
    1 tsp Oregano, ground
    .5 tsp Salt
    .5 tsp Pepper, black
    2 cup Green Beans (snap)
    4 cup Del Monte Petite Cut Diced Tomatoes
    2 cup, sliced Zucchini
    4 cup Beans, red kidney
    2 1tsp Olive Oil

Directions

heat oil in large soup pot
chop onions and place in soup pot to sauté.
Chop Carrots and celery and add to pot
Snap green beans and cut into bite size pieces. Add to pot
Chop Zucchini and potatoes and add to the pot
Saute veggies until they begin to get tender (about 10-15 minutes)
Add all remaining ingredients to the pot and bring to a boil. Reduce heat and cover for about 25-30 minutes, until all veggies are tender.

Makes about 16 1.5 cup servings
