Ingredients

    .33 cup Oats (ground to equal .25 cups coarse flour)
    0.25 cup Buckwheat Flour
    .25 cup Chobani 2% Plain Greek Yogurt
    .25 cup Milk, 3.25%
    1 large Egg Yolk
    0.25 tsp Xanthan Gum
    .25 tsp Baking Soda
    .5 tsp Baking Powder
    .5 tsp Vanilla Extract
    .25 tsp Cinnamon
    1 tbsp Honey
    1 medium Banana, chopped

Tips

VERY allergy-friendly!!! Recipe works well substituting dairy-free milk (for milk AND yogurt) and/or substituting ground flax for egg.


Directions

Mix all ingredients thoroughly.
Drop into oiled pan over medium-low heat, and cook about 2 minutes per side.
Serve with extra (or reserved) bananas and honey for garnish, or serve dry for a meal on the run!

Makes 8, 3-inch pancakes (serves Mom & little kid)
