Energy bites, energy balls, power balls, you choose! I found this recipe on Pinterest by withfoodandlove and tweaked a couple of things.These were originally named Raw carrot cake, which is quite suiting I think. To me they have a distinct season of fall taste. Enjoy this nibble with some coffee or on the go. I'm secretly wondering if they can be used as a spread..... you'll let me know, right?

Ingredients

1 cup, grated Carrots, raw
65 gram(s) Rough coconut flour / unsweetened flakes
100 gram quick oats
2 tbsp Maple Syrup
.5 tsp Cinnamon, ground
30 gram(s) Hemp seed
1 tsp Fresh Ginger, grated
.5 tsp salt
50 gram(s) raisins
1 1tsp Coconut Oil
Directions
Start by grading the carrots. Combine the graded carrots along with all other ingredients, EXCEPT for raisins and coconut oil, into a food processor and pulse until it begins to stick together. Pulse it a little more for good measure and possibly scrape down the sides if this makes you feel better. It made me feel better.
Now add the raisins and pulse again. My batch was a tad dry, if yours is too, add that tiny bit of oil and pulse again.
Roll into bite size balls, I measured mine out to 25 grams. Place in airtight container, refrigerate up to 5 days.
Serving Size: Makes 13 x 25 gram bites
