Ingredients

    3.0 serving Eggland's Best Large Egg
    1.0 tbsp Coconut Oil - Nutiva Organic Extra-Virgin Coconut Oil
    1.0 extra small (less than 6" long) Banana, fresh
    3.0 oz Fage Total 0% Fat Free Plain Greek Yogurt
    0.25 cup kirkland organic unsweetened almond milk
    0.25 cup coconut flour
    0.5 tsp Baking Powder
    1.0 tbsp Agave | Wholesome Sweeteners | Organic Blue Agave
    0.5 cup slices Apples, fresh with skin
    1.0 tsp Cinnamon, ground
    0.5 tsp Nutmeg, ground

Directions

Preheat griddle or skillet to 350 degrees. Beat eggs, add mashed ripe banana, agave, and just-melted coconut oil (too hot will cook eggs). Mix separately the coconut flour and baking powder. Stir all together til smooth, adding in cinnamon and nutmeg. Add almind milk only as needed to reach thick but pourable pancake batter consistency. Spray pan with nonstick spray, if desired for browning. Pour pancakes onto cooking surface, add apple slices on each pancake. Sprinkle on optional finely chopped walnuts if desired (walnuts not included in nutrition numbers) Flip and continue cooking after first side is browned (about 5 minutes). Serve immediately.

Serving Size: Makes six 1- pancake servings, or eat several!
