Ingredients

    5 Egg Whites - Medium Egg
    1/4 cup Trader Joe's Parmesan Cheese Shredded
    1 Tsp. Organic Coconut Oil (Carrington Farms virgin, cold-pressed)
    1 small (2-1/2" dia) (approx 4 p Apples, fresh with skin - chopped
    1 tsp coconut sugar, Madhava™ Organic (1 t)
    1/4 tsp Pepper, red or cayenne
    2 tbsp spring water

Directions

On medium heat in a nonstick pan, place the coconut oil in the pan until melted and beginning to get hot. Add in eggwhites and sprinkle parm cheese on top. Push sides of the eggs edges towards the middle of the pan to cook eggwhites all the way through. Set aside and add in chopped apples, water, and coconut sugar. Stir together until apples are softening and coconut sugar is gooey. Plate the eggs and dust with cayenne pepper, and pour the apples on top of the eggs. Serves: 1
