Ingredients

2.5 serving Mushrooms, Fresh, White Button, Sliced (3 oz / 85g)
12.0 serving Eggs - Scrambled - 1 Large Egg
12.0 oz Cheddar Cheese, Kroger extra sharp
8.0 serving Jennie-O Mild Turkey Breakfast Sausage Lean, 2 0z
3.0 serving Green Onion (fresh-1 stalk)
3.0 cup Baby Spinach - Fresh Express (bagged)
Directions
Preheat oven to 350. Spray casserole dish with canola oil. Lay 3/4 cheese down first followed by mushrooms spinach and cooked sausage. Salt and pepper generously if desired. Scramble eggs in separate bowl. Pour eggs over ingredients in casserole dish, top with sliced green onions. Bake for at least 45 mins. Mixture will not wiggle once eggs are completely cooked. Remove from oven, sprinkle remaining cheese. Enjoy hot. Freezes and rewarms well.
