    0.5 fruit (2" dia) Limes
    1.0 medium Carrots, raw
    0.75 eggplant, unpeeled (approx 1-1/4 lb) Eggplant, fresh
    1.0 tsp Ginger Root
    1.0 cup, pieces or slices Mushrooms, fresh
    5.0 serving Chicken-Perdue Boneless Skinless Chicken Breast, 4oz
    35.0 gram(s) bell pepper, red, sweet, raw
    13.5 oz lite coconut milk
    30.0 gram green curry paste
    1.0 tsp chili paste

Directions

Sautee chicken over medium heat in a wok or large skillet for approximately two minutes on each side. Add vegetables and sautee for another 10 minutes. Add spices, basil and coconut milk. Simmer for 20 minutes. Serve alone or over rice. Serving Size: Makes four 1-cup servings
